Ingredients
- 1 cup butter, softened
- 2 cups granulated sugar
- ½ cup light brown sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract

- ¼ cup baking cocoa
Directions
- Preheat the oven to 350°F (180°C).
- In a large mixing bowl, beat the butter, granulated sugar, and light brown sugar until creamy and fluffy.
- Stir in the eggs and mix until combined. Mix in the vanilla.
- In another bowl, mix the flour, baking powder, and salt.
- Fold the dry ingredients into the dough and form a dough.
- Divide the dough into two parts and fold the cocoa powder into one part.
- Roll out the dough onto a lightly floured working surface. Place them one onto the other.
- Roll the dough up together, wrap the dough with plastic wrap, and place it in the refrigerator for 1-2 hours or 15-20 minutes in the freezer.
- Take the dough out and place it on a cutting board. With a sharp knife, slice them into ½-inch rounds.
- Place the cookies on a baking sheet lined with parchment paper and bake for about 10 minutes.
- Let cool slightly before serving.
Classic Gingerbread Gentlemen

Ingredients
- ⅓ cup butter or butter-flavored shortening
- ½ cup dark molasses

- 1 teaspoon cinnamon
- ½ teaspoon salt
Directions
- In a bowl combine the butter or butter-flavored shortening, molasses, brown sugar, and white sugar. Using an electric mixer, blend until creamy.
- Add in the eggs and continue beating until blended.
- In another bowl, sift together the flour, baking powder, ginger, cinnamon, and salt.
- Working in increments, slowly add the dry ingredients to the wet ingredients, mixing just until blended.
- Cover the dough and place it in the refrigerator for at least one hour or until firm.
- Remove the dough from the refrigerator and preheat the oven to 375°F. Lightly grease or line a baking sheet.
- Roll the dough out onto a lightly floured, flat surface.
- Use gingerbread men cutouts to cut out the shapes of the cookies.
- Transfer the cookies to the prepared baking sheet and place it in the oven.
- Bake for 10-12 minutes, or until the edges are nicely browned.
- Cool on a baking rack and frost, if desired.
